Swiss-Onion Zucchini Bake
- 1 Large Onion
- 3 C Zucchini, thinly sliced
- ¼ C Butter or Margarine
- 2 Eggs (beaten)
- ¼ C Milk
- 1 t Salt
- 1/8 t Pepper
- ½ t Mustard (dry, if you have)
- 1 C Swiss Cheese, grated
Peel onion and slice. Separate into rings. Saute onion and zucchini in butter until tender. Place in shallow 1 ½ qt baking dish. Combine eggs, milk, salt and pepper, mustard and ½ of cheese. pour over vegetables. Sprinkle with remaining cheese.
Bake at 375° for 20 minutes or until a little brown and firm.
