Swiss-Onion Zucchini Bake

  • 1 Large Onion
  • 3 C Zucchini, thinly sliced
  • ¼ C Butter or Margarine
  • 2 Eggs (beaten)
  • ¼ C Milk
  • 1 t Salt
  • 1/8 t Pepper
  • ½ t Mustard (dry, if you have)
  • 1 C Swiss Cheese, grated

Peel onion and slice. Separate into rings. Saute onion and zucchini in butter until tender. Place in shallow 1 ½ qt baking dish. Combine eggs, milk, salt and pepper, mustard and ½ of cheese. pour over vegetables. Sprinkle with remaining cheese.

Bake at 375° for 20 minutes or until a little brown and firm. 

Yield: 6 Servings
