Swiss Cheese Fondue

  • 1 ½ lb. Swiss Cheese, rated
  • 1 piece Garlic
  • ½ pint White Wine
  • 1 small glass (1 oz.) Kirsch
  • 1 t Cornstarch
  • Pepper, nutmeg or paprika to taste.

Commence by rubbing the inside of the fondue pan with garlic. Then put the dish on the heat and warm the wine in it. By steadily stirring all the time, add the grated cheese. As soon as the mixture starts to bubble, add cornstarch which has been mixed to a past with kirsch. Allow the mixture to cook again for 2 or 3 minutes.

Everything must be ready, a basket full of bread cubes, drinks, glasses or cups, a  plate for each guest... and a fondue fork. The dish must be placed in the center of the table atop a spirit burner. To the novices, each diner fastens a cube of bread to his or her fork, gives it a good swirl in the luscious cheese concoction, drains it ever so slightly, then as soon as cool enough, into the mouth it goes.
