Toasted Reubens
- ½ C Mayonnaise or salad dressing
- 3 T Ketchup
- 2 T Sweet Pickle Relish
- 1 T Horseradish
- 4 T Yellow Mustard
- 8 Slices Rye Bread
- 1 lb. Deli Corned Beef, thinly sliced
- 4 Slices Swiss Cheese
- 1 Can (8 oz.) Sauerkraut, rinsed and well-drained
- 2 T Butter
In a small bowl, combine the first 4 ingredients; set aside. Spread mustard on one side of 4 slices of bread. Layer with corned beef, cheese ,sauerkraut and mayonnaise mixture; top with remaining bread. In a large skillet, melt butter over medium heat. Cook sandwiches on both sides until bread is lightly toasted and cheese is melted.
