Toasted Reubens

  • ½ C Mayonnaise or salad dressing
  • 3 T Ketchup
  • 2 T Sweet Pickle Relish
  • 1 T Horseradish
  • 4 T Yellow Mustard
  • 8 Slices Rye Bread
  • 1 lb. Deli Corned Beef, thinly sliced
  • 4 Slices Swiss Cheese
  • 1 Can (8 oz.) Sauerkraut, rinsed and well-drained
  • 2 T Butter

In a small bowl, combine the first 4 ingredients; set aside. Spread mustard on one side of 4 slices of bread. Layer with corned beef, cheese ,sauerkraut and mayonnaise mixture; top with remaining bread. In a large skillet, melt butter over medium heat. Cook sandwiches on both sides until bread is lightly toasted and cheese is melted.

Yield: 4 Servings
