Scalloped Potatoes With Ham
- 4 Medium Potatoes, peeled and thinly sliced
- 2 T Butter
- 1/3 C Water
- ½ C Milk
- 2-3 T Onion Soup Mix
- 3 T Fresh Parsley. minced
- 1 C Colby Cheese, cubed
- 1 C Ham, fully cooked and cubed
In a large skillet, cook potatoes in butter until they are evenly coated. Add water, and bring to a boil. Reduce heat; cover and simmer for 14 minutes or until potatoes are tender. In a bowl, combine milk, dry soup mix, and parsley; stir in cheese. Pour over potatoes. Add ham; cook and stir gently until the cheese is melted and the sauce is smooth. Serve immediately.
