Scalloped Potatoes With Ham

  • 4 Medium Potatoes, peeled and thinly sliced
  • 2 T Butter
  • 1/3 C Water
  • ½ C Milk
  • 2-3 T Onion Soup Mix
  • 3 T Fresh Parsley. minced
  • 1 C  Colby Cheese, cubed
  • 1 C Ham, fully cooked and cubed

In a large skillet, cook potatoes in butter until they are evenly coated. Add water, and bring to a boil. Reduce heat; cover and simmer for 14 minutes or until potatoes are tender. In a bowl, combine milk, dry soup mix, and parsley; stir in cheese. Pour over potatoes. Add ham; cook and stir gently until the cheese is melted and the sauce is smooth. Serve immediately.

Yield: 4 Servings
