Camper's Breakfast Hash

  • ¼ C Butter, cubed
  • 2 - 20 oz. pkg. Hash Browns, shredded
  • 1 (7 oz.) pkg. Lil' Smokies
  • 1 Small Onion, chopped
  • ¼ C Green Pepper, chopped
  • 12 Eggs, lightly beaten
  • Salt & Pepper to taste
  • 1 C Colby Cheese, shredded

Melt butter in a large skillet. Add potatoes, sausage, onion and pepper. Cook uncovered over medium heat for 10-15 minutes, turning once.

Push potato mixture to the sides of the pan. Pour eggs into center of pan. cook and stir over medium heat until eggs are completely set. Season with salt and pepper. Stir eggs into potato mixture. top with cheese and cook for 1-2 minutes longer.

Yield: 8 Servings
